Broccoli Mac and Cheese

I have been trying to figure out some ideas of new things to feed Brady that are not over processed or completely premade from the store. Also not a ton of extra work at each meal time. Someone awhile back suggested Mac and Cheese to me, but after looking at the box and noticing the huge sodium content there was no way I could make that a regular part of his diet. We are by no means the healthiest eaters out there, but I try my best to make better choices for us.
Then it dawned on me to make my own mac and cheese, I just used a regular recipe for mac and cheese. I cut out most of the seasoning since it was for Brady and added some broccoli. I think the grand total of sodium for the entire batch was less than one serving of the pre made stuff. I then put it in lightly greased muffin tins, this is so I could freeze what Brady will not eat in the next few days. I cover it with low sodium panko bread crumbs. It turned out great and Brady seem to enjoy eating. I think I may add some sort of meat next I make, who knows.
I will also try to post any other food ideas I come up with. Also please share if you have any food ideas for Brady.
